Texas Beef and Pepper Jack Quesadillas

Ingredients:

8 (10-inch) flour tortillas
1 pound fully-cooked deli roast
beef, chopped
2 cups pepper Jack cheese
1 small onion, chopped
4 tablespoons chopped fresh cilantro
1/4 teaspoon salt
Freshly ground black pepper to taste
Salsa, homemade or purchased for accompaniment

Steps:

  1. In large bowl, mix together the chopped beef, shredded cheese, onion, cilantro, salt and pepper.
  2. Arrange one-eighth of the filling on each tortilla, covering half of it. Fold the tortilla over to make a half-moon. Place quesadillas, not touching, on shallow baking pans.
  3. Bake in a 450°F (230°C) oven until tortillas are crisp and golden; about 5 minutes.
  4. Transfer to large cutting board and cut each into 3 wedges. Serve hot with your favorite salsa.

Beefy Nachos Delux

Ingredients:

 1 1/4 pounds lean ground beef
1/4 cup water
1 (1.35-ounce) packet taco seasoning mix
8 ounces tortilla chips
1/2 cup sour cream
2 tablespoons water
1 cup shredded cheddar cheese
1 (2-ounce) can sliced ripe olives, drained
1/4 cup pickled jalapeños slices (optional)

Steps:

  1. In a large skillet, cook ground beef until no longer pink, stir in water and taco seasoning and continue cooking for two more minutes. Remove from heat.
  2. Preheat oven to 400°F (205°C).
  3. Spread chips onto a large baking sheet and top with the seasoned ground beef.
  4. Combine sour cream and water in small bowl; drizzle over beef. Sprinkle with cheese, olives and jalapeños, if desired.
  5. Bake nachos for 8 to 10 minutes or until cheese is melted.
  6. Serve hot.

San Diego Fresh Salsa

Ingredients:

4 cups chopped, peeled fresh tomatoes

1/2 cup chopped onion

2-4 Jalapeno peppers, seeded and finely chopped

1 tbsp olive oil

1 tbsp vinegar

2 garlic cloves minced

1 tsp cumin

to ta salt

Steps:

 In bowl, combine all ingredients, mix well. Let stand for about 2 hours. Serve at room temperature. Store in refrigerator.
